This week I bought a beautiful breadfruit at the market (grown by a 7-year old!) and treated myself to Ulu Pancakes! What a treat. Such a simple and delicious way to make any day special… imagine what it would do to Mother’s Day! Aloha FarmLovers!

This week AMFM welcomed our newest and youngest vendors, The Littlest Co-Op into our vendor ohana. The Littlest Co-Op is a hui of keiki farmers selling their home grown veggies and plants. Come support their ambitious plan to learn about plants, math, local food, self-sufficiency and entrepreneurship.

Leo Campagna (age 7), the CEO of The Littlest Co-Op, approached us several months ago and successfully pitched his idea for a market stand that features fruit and vegetable plants grown and sold by local keiki farmers. Leo’s concept is to promote healthy eating, local food, home gardening and to operate a place of business where he, his friends and another other local keiki farmers can make their own money. All of the plants are grown by keiki farmers and sold by keiki farmers. The kids do their own research, choose their plants, grow their products, set their prices and share the fruit of their labor at the market. All of the accounting is also managed by the keiki farmers. The Littlest Co-Op tent is run by Leo Campagna with help from his sister, Emma Sophia Campagna (age 5), Charlie Parsons (age 5), Ian Voinov (age 7), and other keiki farmers who are in various stages of growing plants for market. They have a little chicken mascot named “Henrietta”.

Here at FarmLovers Farmers’ Markets, we love providing opportunities for children to learn about their personal well-being and about the health of our islands. We do this by offering healthy foods to eat, providing a plethora of locally grown produce to behold, and creating free sustainable arts and crafts in Keiki Korner. At Haleiwa & KailuaTown FM’s our Keiki Korners feature Rex and Mayling, who create programming that allows the children to tap into the wonders of life through sustainable arts and crafts. Each week the children participate in a different activity that raises their consciousness of healthy food and increases awareness of treating our beautiful island with respect and love. These activities are a free and fun, memorable activity to enhance the farmers’ market experience. This is one of Chef Nicole LaTorre’s favorite recipes! Although she calls it a ‘Breakfast Soufflé’, this one def passes as a delicious lunch, dinner or mid afternoon snack for the gluten-free, paleo & gourmet crowd.

It’s easy to make a bunch in advance, so you’ll be covered for days. Take it on the go with you to work or to the gym! Enjoy chilled or reheat.

I think a substitute of Smoked Fish for the bacon would add even more local flavor and plenty of awesome… what do you think?
